Aloo Paratha

Ingredients (for 8 people):
  • 200 gr. whole wheat flour
  • 100 gr. buckwheat or spelt flour
  • 4 tablespoons butter
  • 125 ml. warm water
  • ½ teaspoon salt
  • 3 medium potatoes
  • 1 tablespoon ghee
  • ½ teaspoon cumin seeds
  • 1 teaspoon freshly ground ginger
  • ½ teaspoon cayenne pepper, freshly ground
  • ½ teaspoon turmeric
  • 1 teaspoon freshly squeezed lime
  • 1 teaspoon salt
  • 2 tablespoons freshly chopped cilantro
Preparation:
For the dough:

Mix flour and salt, slowly add water until you have a soft dough. Knead 6-8 minutes. Moisten the dough with water, wrap it in a damp towel and refrigerate for half an hour — 1 hour.

For the filling:

Boil the potatoes until soft, remove the skin and puree.1 tablespoon of ghee in a pot. Add cumin and lightly roast. Add ginger, pepper, and turmeric and simmer. Add the mashed potatoes and bake everything together for 5 minutes. Now add lime juice, salt and coriander leaves, bring to a strong boil and then let cool down. Roll out the dough and cut out small round of “circles”. Place some potato mixture in the middle of the small dough pans and close the dough.

Fry the Aloo Paratha in a pan with ghee until golden brown and bake briefly in the oven.

Tastes delicious with a fresh salad and yogurt sauce!
